Melvin Brewing got its start in Jackson Hole in 2010 as what the company describes as "a tiny 3-barrel system tucked in the back of a restaurant." The beer took off fast enough that Melvin eventually built a full production brewery in Alpine, Wyoming, and the Dojo, at 20 E Broadway Ave, marks the brand's return to a dedicated space in town.
The concept is built around a specific mashup: dive-bar energy, hip-hop culture, and Asian-inspired street food, all under one roof. The kitchen turns out pork and cabbage dumplings with chili crisp, fried shallot, radish, and scallions; a KFC bao stuffed with Korean fried chicken thigh, kimchi aioli, and salted cucumber; Dojo wings tossed sweet-chili style; and a Japanese fried chicken plate with chipotle aioli, togarashi, and sesame. Ramens and pozoles round out the heartier end of the menu, and the sides list runs to harusame noodle salad, kale cashew salad, pickled vegetables, kimchi, carrot and daikon slaw, and seaweed salad. On the beer side, look for Crouching Tiger IPA, Night Market IPA, and Cobra Kai West Coast IPA among the rotating taps.
Regulars can join the Mug Club for $50 a year, which comes with a personal mug, 20% off drafts, merchandise, and six-packs to go. The Dojo also runs an ongoing record-trading program — bring in a record worth donating, and the bar trades you a beer for it.
The Dojo keeps late hours by Jackson standards: 11:30 a.m. to 11 p.m. Sunday through Wednesday, and 11:30 a.m. to midnight Thursday through Saturday.
