About Bin22

Bin22 was built around the travels of owner and sommelier Gavin Fine, whose time in Tuscany and elsewhere in Europe shaped a concept the restaurant describes as "a small wine shop and grocer experience" fused with a tapas restaurant. The space at 200 West Broadway operates as three things under one roof: a bottle shop stocked with hundreds of wines, a specialty grocer carrying hand-curated food items, and a restaurant serving Spanish- and Italian-style small plates. The crossover between shop and table is a real perk โ€” anyone dining at Bin22 can pick a bottle off the wine shop shelf and drink it with dinner with no corkage fee.

The food menu is built for grazing. Charcuterie comes from Italy and Spain โ€” mortadella, Calabrese salami, Spanish chorizo, jamรณn serrano, finocchiona โ€” sold by the piece or in flights of three or five. The cheese list runs from manchego to an espresso-and-lavender-rubbed cheese called Barely Buzzed to a goat's-milk cheese called Dorothea served with potatoes. There's a full section built around mozzarella โ€” burrata, stracciatella, and whipped preparations paired with things like grilled peaches, charred corn, nduja carrots, or melon and jamรณn โ€” plus a "for the table" list of shared plates spanning marinated olives, grilled octopus, seared tuna, crusted trout, lamb pintxos, and bacon-wrapped dates stuffed with chorizo and manchego. Sundays bring a rotating, regionally focused paella and sangria starting at 4 p.m.

Executive Chef Adrian Castaneda is a Jackson Hole native who started learning bread and dough technique from his own chef father; he came up through dishwashing, prep, and line-cook roles at Rendezvous Bistro โ€” the first restaurant in the Fine Dining Restaurant Group, which also owns Bin22 โ€” before taking the kitchen's top job, and he holds a WSET Level 2 wine certification. Restaurant Manager Brooke Violette has run the floor since August 2023.

On reservations, specifically: Bin22's own website has no booking link or Resy widget anywhere on it, unlike sister restaurants Hatch and Coe Tavern, which both promote Resy prominently on their sites. That absence, combined with a consistent pattern across Yelp and TripAdvisor describing Bin22 as walk-in only, points toward no formal reservation system โ€” but because Bin22 doesn't state this directly itself, calling (307) 739-9463 ahead of a visit, especially with a larger group, is the safer move.
