The Bistro opened in spring 2021 inside The Cloudveil hotel at 112 Center Street, a block off Town Square, as the follow-up act from restaurateurs Gavin Fine and Roger Freedman of the Fine Dining Restaurant Group — the same team behind the recently closed Rendezvous Bistro. Where Rendezvous ran American bistro fare for twenty years, The Bistro pivots toward a Parisian brasserie template: outdoor café seating on Center Street, a zinc bar, a dedicated oyster bar, and a mix of indoor dining rooms built for both a quick lunch and a slower dinner.
The dinner menu leans hard into French bistro technique. Hors d'oeuvres include boudin balls, dry-aged steak tartare, charred octopus, calamars frits, and escargot à la bourguignon. The raw bar runs oysters on the half shell, tuna tartare, jumbo shrimp cocktail, and a full plateau de fruits de mer for sharing. Main courses cover croque madame, a bistro burger, moules frites, herb-roasted chicken, duck confit, and trout almondine, alongside a steak au poivre built on a 12-ounce New York strip with brandy-peppercorn sauce and pommes frites. The kitchen also runs a rotating set of daily specials — duck breast on Mondays, Moroccan lamb on Thursdays, and seared scallops on Fridays, as of this writing.
Wine and Beverage Director Neil Loomis oversees a French-inflected cocktail list and a European-focused wine program built to hit a range of price points. The restaurant has picked up Michelin recognition in both 2024 and 2025.
Service runs long and covers most of the day: brunch from 7 a.m. to 3 p.m., a happy hour from 3 to 5 p.m., and dinner from 5 p.m. to 11 p.m., with no gap between the three. Reservations are handled through OpenTable, and the restaurant can be reached directly at 307-699-6100.
