Persephone Bakery
โจ Editor's PickAbout Persephone Bakery
Persephone is a French-technique bakery and cafe that's grown from a single Jackson storefront into a small local group โ Persephone Jackson at 145 E. Broadway, Persephone Westbank across the river in Wilson, and a sister cafe called Picnic. The baking philosophy is stated plainly on their site: "We live as we bake and we bake as we live: with heart, hard work and creativity," and the pastry case is built fresh each morning using traditional French technique. The kitchen sources heavily from the valley and the wider region, working with more than 20 farms, dairies, and ranches for ingredients ranging from honey and yogurt to local greens and produce โ the kind of sourcing that shows up in a menu built around egg sandwiches, waffles, and a rotating pastry lineup, backed by drip and espresso drinks made with coffee from Jackson Hole Roasters, whom Persephone credits for continually refining their blends for balance and consistency. The James Beard Foundation has recognized the bakery, a mark of the kind of attention Persephone's baking has drawn well beyond the valley. The flagship Jackson cafe is the biggest of the three, open Monday through Saturday from 7am to 6pm and Sunday 7am to 5pm, though the kitchen itself closes earlier, at 3pm, so anyone chasing a hot pastry or sandwich should plan an earlier visit rather than a dinnertime one. The Westbank location in Wilson and the Picnic offshoot both run shorter, simpler hours โ open daily from 7am to 3pm. All three locations are counter-service, with online ordering and an app for pickup; there's no dine-in reservation system, consistent with a bakery built around fast turnover of fresh-baked goods rather than a sit-down meal. It's the kind of place locals treat as a daily habit rather than an occasional destination โ a stop for coffee and a pastry on the way to somewhere else, in a town where good bread isn't a given.
